Baked Parsnip Fries

Root vegetable fries with a subtly sweet flavor.

When preparing this recipe, start with clean countertops and utensils. Wash hands with soap and water. Wash whole, fresh produce under cold, running water by rinsing rosemary, gently rubbing garlic, and scrubbing parsnips with a clean vegetable brush. Prewashed, packaged items do not require further washing.

Ingredients

  • 2Β½ pounds parsnips, peeled, cut into about 3" x Β½" strips
  • 1 Tablespoon chopped fresh rosemary (optional)
  • 1 large garlic clove, minced
  • 3 Tablespoons vegetable oil (canola or olive preferred)
  • Ground black pepper, to taste
  • Β½ teaspoon (or more) ground cumin

Directions

  1. Preheat oven to 450Β°F.
  2. In a large bowl, toss parsnips, rosemary, garlic, oil, pepper, and cumin.
  3. Spread out evenly onto a baking sheet.
  4. Roast the parsnips for about 25 minutes, until golden brown.
