Managing Bitterness When Pursuing Significant Hop Flavor and Aroma in the Brew House looks at strategies for achieving full hop flavor and aroma in hot wort while keeping bitterness intensity aligned with stylistic targets. While cold-side hopping is currently attracting a lot of attention, understanding the art and science of hot side hopping can make the difference when pursuing well-balanced, well-structured recipe design for many "more traditional" beer styles. Understanding hop composition and the influence of heat allows the brewer to control the intensity of bitterness even when big hot-side hop flavor and aroma are desired.

The benefits of hot-side hopping have been exploited by brewers for centuries. However, our ability to reap the benefits that come through careful management of hot-side hop additions requires a firm grasp of boiling dynamics and how they influence the foundational hop character of wort.

The program is funded by a PDA Specialty Crop Block Grant ME# C940000781 and offered in partnership with Penn State Continuing Education, Berks Campus and Pennsylvania College of Technology, Brewing & Fermentation Science.
