Ingredients
Produce
- 6 medium tomatoes- if winter tomatoes don't look good sub cherry or hot-house
- 4 large cucumbers- we prefer English
- 1 bunch chard or spinach
- 1 red onion
- 1 medium yellow onion
- 1 red bell pepper
- Garlic
- Fresh Parsley
- Fresh Dill
- Scallions
Protein
- 1 (15oz) Can white beans, rinsed and drained
Dairy
- 32 ounces Greek-style yogurt
- Feta cheese
- Mozzarella cheese, shredded
- Parmesan cheese, grated
Pantry
- 1 (16 oz) package shelf-stable gnocchi
- 1 (15 oz) can low sodium diced tomatoes with Italian seasoning
- Kalamata olives (pitted)
- Olive oil
- Red wine vinegar
- White wine vinegar
- Oregano, dried
- Red pepper flakes
- Salt
- Pepper
Prep Ahead Steps
Wash and dry all produce under running water
