Ingredients

Produce

  • 6 medium tomatoes- if winter tomatoes don't look good sub cherry or hot-house
  • 4 large cucumbers- we prefer English
  • 1 bunch chard or spinach
  • 1 red onion
  • 1 medium yellow onion
  • 1 red bell pepper
  • Garlic
  • Fresh Parsley
  • Fresh Dill
  • Scallions

Protein

  • 1 (15oz) Can white beans, rinsed and drained

Dairy

  • 32 ounces Greek-style yogurt
  • Feta cheese
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated

Pantry

  • 1 (16 oz) package shelf-stable gnocchi
  • 1 (15 oz) can low sodium diced tomatoes with Italian seasoning
  • Kalamata olives (pitted)
  • Olive oil
  • Red wine vinegar
  • White wine vinegar
  • Oregano, dried
  • Red pepper flakes
  • Salt
  • Pepper

Prep Ahead Steps

Wash and dry all produce under running water

Mince 8 cloves of garlic according to the videos below:
