Spinach Skillet Recipe
Try this as a meatless meal or as a healthy and tasty side dish for lean beef, chicken, fish, or pork.

When preparing this recipe, start with clean countertops and utensils. Wash hands with soap and water.
Ingredients
- 2 (15 ounce) cans stewed tomatoes
- 10 ounces frozen spinach
- 1½ cups cooked white beans or 1 (15 ounce) can no salted added white beans, drained and rinsed
- 1 cup cooked brown rice
- Ground black pepper, to taste
- Optional oregano, basil, or red pepper flakes, to taste
Directions
- Add stewed tomatoes to a medium saucepan, heat to boiling.
- Add spinach. Reduce heat to low, cover, and simmer for 5 to 10 minutes.
- Add beans, rice, pepper, and optional seasonings.
- Increase heat to medium. Cook, stirring until heated through.
