Spinach Skillet Recipe

Try this as a meatless meal or as a healthy and tasty side dish for lean beef, chicken, fish, or pork.

When preparing this recipe, start with clean countertops and utensils. Wash hands with soap and water.

Ingredients

  • 2 (15 ounce) cans stewed tomatoes
  • 10 ounces frozen spinach
  • 1½ cups cooked white beans or 1 (15 ounce) can no salted added white beans, drained and rinsed
  • 1 cup cooked brown rice
  • Ground black pepper, to taste
  • Optional oregano, basil, or red pepper flakes, to taste

Directions

  1. Add stewed tomatoes to a medium saucepan, heat to boiling.
  2. Add spinach. Reduce heat to low, cover, and simmer for 5 to 10 minutes.
  3. Add beans, rice, pepper, and optional seasonings.
  4. Increase heat to medium. Cook, stirring until heated through.
